In this Taste Workshop, discover the French approach to wine and cheese pairing with the help of some Slow Food Presidia. In recent years, white wines have come to the fore in the context of wine and cheese pairings, but reds made from gamay grapes are also excellent in combination with many cheeses. Traditional French breads will be served along with the cheese and wine.

The tasting line-up

Cheeses:

  • Béarn High Pasture Cheeses
  • Tomme de la Brigue
  • Bleu de Queyras
  • Natural Farmhouse Camembert

Wines:

  • Beaujolais Lantignié 2022 from Domaine de Romarand, made from gamay grapes grown in 70-year-old vineyards (currently undergoing conversion for organic certification) at an elevation of 470 meters above sea level. The grapes are harvested by hand and fermented with wild yeast.
  • Jurançon Doux, Toute une histoire (2021) – Domaine Nigri. Domaine Nigri is a winery located in Monein, in the southwest of France, in the heart of the Jurançon appellation and facing the Pyrenees. It has been producing both dry and sweet Jurançon wines since the 17th century. The wine offered is the quintessential expression of the Petit Manseng grape variety, cultivated in the three terroirs that characterize the Jurançon appellation.

Breads: Accompanying the wines and cheeses will be two traditional French breads from the Slow Bread project, founded in Bourdeax by Bartolo Calderone. These sourdough breads are made with stone-ground flour from French heirloom wheats.
