From a pan-Italian panettone to the chestnut groves of Calabria, and featuring three chefs from the Slow Food Cooks’ Alliance as well as coffees from the Slow Food Coffee Coalition, this will be a snack like no other.

Andrea Zani of Qbio pizzeria in Sarezzo and Marco Locatelli of Rise Live Bistrot in Vimercate will tell us about an unlikely project born in the midst of Covid. At a moment when the pandemic was bringing restaurateurs all over Italy to their knees, these two chefs from Lombardy had an idea: to unite the Alliance cooks in solidarity through the creation of a panettone made from seasonally available Slow Food Presidia products and reflective of the different cooks’ regions and sensibilities. This ambitious project is still underway, and the best way to understand it is to taste it!

Joining chefs Zani and Locatelli for this workshop is Delfino Maruca of Il Vecchio Castagno (“the old chestnut tree”), a restaurant set among the chestnut groves of Serrastretta, Calabria. Chef Maruca’s passion is searching for waste-free recipes based on local products.

The tasting line-up 

  • Qbio pizzeria presents the Alliance panettone, a dessert par excellence that even devoted fans of pandoro will admit is emblematic of the Christmas season. All the ingredients are carefully selected and most come from Slow Food Presidia, Slow Food communities, or, at the very least, organic production.
  • Il Vecchio Castagno presents traditional Calabrese sweets made from chestnut flour.

These delicacies will be paired with a selection of coffees from the Slow Food Coffee Coalition.
