Massimiliano Mussoni is the chef at La Sangiovesa in Santarcangelo di Romagna and a member of the Slow Food Cooks’ Alliance. All the meat in chef Mussoni’s kitchen comes from La Sangiovesa’s own farm or from nearby small-scale producers, proving not only that it is possible to raise animals with respect, but also that the meat from such animals elevates the quality of every dish.

The traditional recipes from Romagna’s gastronomic tradition teach us how best to use and honor biodiversity and local ingredients, especially meat. It is precisely these ingredients, which reflect the everyday life and practical knowledge of producers, that make the dishes memorable and unique.

The tasting line-up

  • Soup made with Santarcangelo Water Onion (Slow Food Presidium) and manfrigoli, a traditional Romagnola pasta with nutmeg, parmigiano, and eggs. Two versions of the soup will be made, one with a broth of chicken bones and the other with a vegetable broth.
  • Galantina made with Romagnola Chicken (Slow Food Presidium), marinated onions, and egg. This is a traditional summer dish, typically prepared on Sundays for festive occasions. The meat is finely chopped with black truffle, parmigiano, celery, and carrot, and then rolled up in fine cheesecloth like a big sausage and cooked in chicken bone broth. It will be served with Presidium onions and marinated eggs.
