Eliana Catalani, chef at Spirito Divino restaurant in Trastevere, Rome, is a long-time supporter of Slow Food and a member of the Cooks’ Alliance.

She regales us with stories of permanent meadows and methods for preserving seasonal ingredients, communicating directly with Massimo Antonini, producer of Roman Countryside Caciofiore (Slow Food Presidium). This remarkable cheese is made from sheep’s milk coagulated with thistle rennet. It is a symbol of traditional transhumance in the countryside around Rome.

The tasting line-up

  • Savory maritozzo with artichoke and Roman Countryside Caciofiore pâté. The maritozzo is an iconic Roman pastry beloved around the world. Chef Catalani presents a savory version with artichoke, which she can make even when this vegetable is not in season by using vacuum cooking, a method that preserves the artichoke without compromising its distinctive flavor.
  • Mezze maniche pasta from Pastificio di Martino with Roman Countryside Caciofiore, pepper, and pears.
