Slow Food Cooks’ Alliance member Natalia Mazzoli of Agriturismo Il Castagneto in Castiglione Chiavarese (Genova Province) presents her cooking style and philosophy, which is founded on a network of close relationships with small-scale producer-friends in Val Petronio, a beautiful land of Mediterranean scrub and woodland where the smell of the sea blows in on the scirocco and tramontana winds.

At Il Castagneto, herbs and olive trees, grapevines and chestnut trees, acacias and fruit trees all grow side-by-side. Chef Mazzoli guides the guests at her restaurant on a journey of discovery and history with unique combinations of seasonal, local ingredients.

The tasting line-up

  • Cappon magro, a legendary dish associated with Ligurian sailors, which originated among the poor and has evolved into a festive dish beloved throughout the region. Traditionally prepared from hard biscuits, vinegar, tuna musciame, and fave beans, there are also more “baroque” versions of cappon magro enriched with various fish and shellfish, including gurnard, oysters and other mollusks, and prawns, as well as vegetables.
  • Tegame alla Vernazza, a traditional dish named for the village of Vernazza, made with thinly sliced White Quarantina Potatoes (Slow Food Presidium), anchovies, olive oil, white wine, garlic, lemon zest, fresh tomato, parsley, oregano, and rosemary, all cooked in a large casserole pan (tegame).

These dishes, prepared by chef Mazzoli, will be paired with wines from Azienda Agricola Possa in Riomaggiore. Run by Samuele Heydi Bonanini, Possa is known for its natural wines, produced with spontaneous fermentation and without filtration, and allowed to mature for long periods. One of Possa’s most renowned wines is its Cinque Terra Sciacchetrà, a Slow Food Presidium.
