Antonella Scatigna, chef at La Taverna del Duca restaurant in Locorotondo (Bari Province) and a member of the Slow Food Cooks’ Alliance, serves up local tradition in the form seasonal vegetables selected and prepared with the utmost care.

Chef Scatigna’s restaurant opened in 1997 and, after many ups and downs, it has become a regional institution in Bari. As a conscientious restaurateur devoted to her local territory, Chef Scatigna insists on the right to say “no” to customers who ask for products that are not in season. Educating consumers in this way is one of the many important responsibilities of Alliance cooks.

The tasting line-up

  • Cavatelli pasta made from Senatore Cappelli wheat, with Murgia Carsica Black Chickpeas (Slow Food Presidium). Chef Scatigna always soaks the chickpeas in the pasta cooking water, as tradition dictates. The Senatore Cappelli wheat from the cavatelli are made is grown locally.
  • Incapriata made with Carpino Fava Beans (Slow Food Presidium). This is a very old dish typical of Pugliese peasant cuisine. The fava beans are pureed and served with wild chicory, traditionally on a mezzo piatto, a plate placed at the center of the table from which all the guests could eat. The fava puree and chicory were mixed as the dish was eaten, hence the name incapriata, which means “mixture” in the local dialect.
