Christian Borchi, chef at L’Antica Porta di Levante in Vicchio (in the mountains near Florence) and a member of the Slow Food Cooks’ Alliance, uses each dish as an opportunity to express himself, his territory, and his philosophy, which aims for a delicate balance between tradition and innovation.

Since 2001, chef Borchi has been on an unending quest in search of the best ingredients from the local area, always respecting the seasons while also embracing international ingredients for particular dishes. Christian traveled the world after completing his studies in hospitality, but it wasn’t until he returned to Mugello in northern Tuscany that he fully understood the value and potential of local gastronomic heritage based, in the case of his region, on cattle grazing.

Today, chef Borchi spends much of his time visiting the farms from which he sources his ingredients and getting to know producers face-to-face. In this workshop, he masterfully presents the Mugello region with dishes focused on high-quality meats from two farms that exemplify proper respect for animals and the land.

The tasting line-up

  • Lamb morsels from Pomarancina Sheep (Slow Food Presidium) with lavender and Jerusalem artichoke puree.
  • Tortelli mugellani with potato filling and Limousin beef ossobuco ragù.

These dishes will be enhanced with the addition (depending on availability) of aromatic herbs and ingredients from the forests and highlands, such as mushrooms and berries.

Accompanying the dishes are beers selected by QBA – Quality Beer Academy.
