This will be an exceptional cultural and culinary encounter in which Ecuadorian and Mexican chefs come together to celebrate milpa and chakra, two ancestral agricultural traditions that connect them to their Indigenous American roots.

Milpa and chakra are ancient agricultural systems from Mesoamerica and South America, respectively, that combine the cultivation of corn with other crops such as beans, squash, and amaranth. They are characterized by their high biodiversity and the mutually beneficial relationships between different crop species.

In this Taste Workshop, we’ll explore the gastronomic richness of the milpa through traditional dishes and innovative reinterpretations and discover how this ancient cultivation systems not only nourishes people’s bodies, but shapes their culture and identity, too.

The tasting line-up

  • Sopes (a traditional Mexican dish composed of a fried masa base topped with various ingredients such as beans, meat, cheese, vegetables, and spicy salsas) served with a salad dressed with chili oil and pumpkin seed oil. This dish will be paired with atole tejuino, a popular Mexican beverage.
  • Ceniza tamales (a traditional Mexican dish in which masa is mixed with ash and cooked in a packet of fresh leaves) and minguichi (a typical soup from Michoacán made with milk, green tomatoes, onion, garlic, corn, and poblano peppers) with traditional garnishes including squash.

Presenting these dishes will be Alejandro Espinoza and Esteban Tapia Merino of the Slow Food Cooks’ Alliance in Ecuador, and Nelly Sanchez and Gladys Espinoza of the Slow Food Cooks’ Alliance in Mexico.
