The biodiversity of meadows and pastures doesn’t only provide us with extraordinary cheeses; it also influences the flavor and quality of the meat from animals who are raised outdoors in a semi-wild state, free to move at their leisure, feed on whatever natural forage they find, and grow slowly.  

We will learn to taste these qualities in this workshop dedicated to the biodiversity of cured meats and to the natural husbandry systems that give these products their distinctive colors, consistencies, and flavors.
