This year, we celebrate the 200th anniversary of the Basotho Nation and the traditions and heritage of the Sotho people of Southern Africa. At Terra Madre, Slow Food In Lesotho shines a light on the local foods that are an integral part of Sotho cultural identity.

Hosted by members of the Slow Food Cooks’ Alliance in Lesotho, this Taste Workshop presents classic and traditional dishes from Sotho cuisine alongside zero-waste recipes that reuse indigenous ingredients in innovative ways. Among the ingredients to be featured are several Ark of Taste products—including beans and lentils, red and white sorghum, and wheat—that demonstrate the strong collaborative relationship chefs from the Alliance and local farmers and businesses.

The tasting line-up

Traditional dishes and products include:

  • Nyekoe, a hearty and nutritious stew that showcases Lesotho’s local sorghum and incredible diversity of beans.
  • Lipabi (Ark of Taste), a typical snack made from toasted and ground corn with a little sugar and salt. Sotho people traditionally prepared lipabi as a provision for long journeys. It is a convenient food for travelers because is it filling and it keeps for a long time.

Creative recipes include:

  • Maluti bean balls in a tomato and herb sauce, served with phaphatha (a traditional wheat flour flatbread). This dish emphasizes the versatility of local beans, wheat, and fresh seasonal products like tomatoes and aromatic herbs.
  • Savory sorghum and lentil pie with yogurt sauce. This highly nutritious dish incorporates fresh seasonal produce from local farmers.

Joining us for this workshop will be Ska Moteane and Mahlao Maema, coordinators of the Slow Food Cooks’ Alliance in Lesotho.
