Chef Pietro Zito’s restaurant, Antichi Sapori, is located in Montegrosso di Andria in the Alta Murgia area of Puglia. Here, within the ancient walls of a partially abandoned village at the foot of Castel del Monte, time seems to stand still and nature reigns supreme, influencing every aspect of the local cuisine.

The sheep trails, the centuries-old olive oil mills, and the old farms are all a testament to the profound relationship between people and the land, and every dish that chef Zito creates reflects this relationship. Each ingredient and aroma is an homage to tradition and to the beaty of the surrounding landscape, expressed with skill and respect. Never constrained by the latest fashion, chef Zito is driven by a continuous and passionate search for the genuine character of the landscape. His mantra, “everything comes from the earth,” captures his love for local flavors and his ability to excite the palate and the imagination with simplicity—something which seems increasingly difficult to achieve in the 21st century.
