Andrea Riboni studied at the University of Gastronomic Sciences of Pollenzo and then cooked at the Academic Tables (the university’s canteen) for a few years before returning to Vas, in Belluno Province, where he transformed his family’s bottega into one of the best restaurants in Italy. Locanda Solagna, which is marked with the snail of approval in the Slow Food Osteria guide, is dedicated to quality without compromise, to continuous research, and to taking delight in the delicious.

Chef Riboni and his team craft the menu at Locanda Solagna with great care and attention, sourcing ingredients from Slow Food Presidia and small local farms. Technique is valued, but not as an end in itself: Eash dish is designed and created, first and foremost, to exalt the natural character of the ingredients from which it is made. At this dinner, you will taste for yourself that there is a great story behind every dish.

Menu: 

  • A welcome from the kitchen
  • Polenta (made from sponcio corn, an Art of Taste product) with mushrooms
  • Fasoj e fasoj (“beans and beans”)
  • “La Fagiana” vialone nano rice with cow’s milk robiola, Belluno zucca santa (a pumpkin variety on the Ark of Taste), and a crumble of Belluno hemp
  • Arctic char with smoked potatoes and seasonal vegetables
  • Bellunese cheeses
  • Tartlet of pears cooked in wine, chocolate mousse, and Langhe hazelnuts

Wines:

These dishes will be paired with wines from Veneto and Piedmont, including a classic prosecco col fondo from Treviso, a white from the Colli Asolani, a nebbiolo from the Langhe and another from the Boca wine region near Novara, and a Vermouth di Torino Classico.
