The meat we eat, the milk and cheeses, the sugar in snacks, spreads, and drinks—all are essentially made of corn. And so is the packaging in which these foods are transported and sold, the compostable plates from which we eat them, and the biofuels we burn.

Commercial varieties (which are often genetically modified) are marketed by a handful of multinational seed companies (the same ones that produce fertilizers and pesticides) and grown in monocultures that have high environmental and social costs. These corn varieties are hardly recognizable compared to the thousands of traditional, biodiverse types selected by agricultural communities over generations that feature in local gastronomy all over the world.

Slow Food Italia created the Slow Mays network to support the small-scale farmers and communities who continue to produce and process the traditional corn varieties linked to their specific cultures. Today there are around 100 producers in the network, conserving nearly 40 varieties of open-pollinated corn throughout Italy. This conference is an opportunity to hear from them about their experiences.
