Imagine yourself strolling through a meadow whose fertility and vitality are the result of a sustained partnership between cows, sheep, goats, insects, and people. These are known as permanent meadows.

We think it’s worth highlighting permanent meadows because they are a perfect example of what a balanced relationship between human beings and the natural world can look like. Cheeses produced from the milk of animals who graze on permanent meadows are an authentic expression of the distinctive qualities that characterize these special landscapes.

The tasting line-up

  • We begin in the Alpine landscape of Piedmont, where Le Brusà farm cultivates tradition with its famous plaisentif cheese. Here, cows graze freely in the mountain pastures, contributing to local biodiversity and giving us cheeses rich with the unique flavors of summer meadows.
  • We then move on to Il Satiro farm—one of the cheesemaking sensations of Emilia Romagna—where the Brighi brothers, guided by their passion for nature and animal welfare, produce goat cheeses that embody the harmony between people and place, offering us an unforgettable tasting experience.
  • Next, we head to Veneto, to the heart of the Dolomites, where the great diversity of grasses that grow on this region’s precipitous slopes provides superior forage for grazing animals. Here, the Livinallongo cooperative dairy produces Fodóm Malga Cheese (Slow Food Presidium).
  • We end our journey back in Emilia Romagna with an exceptional Parmigiano Reggiano made from the milk of red Reggiana cows.
