Begoña Vázquez, a member of the Slow Food Cooks’ Alliance, was born in Ríos, in the Spanish region of Galicia, in 1986. A leading exponent of Galician gastronomy, this she year she was named the best chef in Galicia.

After working in restaurants including Beiramar in O Grove, Sanmiguel in Ourense, and the Panticosa Resort (alongside Michelin-starred chef Pedro Subijana), chef Vázquez decided to start her own venture. Eleven years ago, she opened O Souta das Candeas tapería in Verín.

The tasting line up:

  • Cachena beef: Cachena cattle (Ark of Taste), known for their rusticity, are well adapted to the environment of Galicia and northern Portugal. This breed is undemanding to raise because it can easily survive in a semi-wild state, taking advantage of natural resources on the landscape. It is highly appreciated for the excellent quality of its meat, which has a Protected Designation of Origin in Portugal—Carne Cachena da Peneda. Cachena cows also produce small quantities of milk with an intense flavor and aromas of wild herbs, used to produce Brandas da Cachena cheese.
  • Eggs from piñeira chickens: The galiña piñeira (Ark of Taste) is a chicken breed adapted to the cool and humid Atlantic climate of Galicia. The hens produce eggs throughout the year and are very attentive to their chicks. This breed is also raised for meat.
