The Ark of Taste began its journey in 1999 and has continued ever since. It travels the world in search of endangered local food products that belong to the cultures, histories, and traditions of the entire planet. There are currently over 6,000 products aboard the Ark, and this number keeps growing.

The Ark protects an extraordinary heritage of fruits, vegetables, animal breeds, cheeses, breads, cured meats, and more, pointing out the existence of these products and the possibility of their extinction within a few generations. Agricultural and food biodiversity are at risk all over the world due to industrialization, the erosion of genetic resources, the transformation of diets, climate change, rural abandonment, migration, and conflict.

The Ark of Taste invites everyone to take action. In some cases, we need to rediscover products, put them back on the table, and support producers whose stories need telling. In others, such as the case of endangered wild species, it might be better to eat them less or not at all, to conserve them and favor their reproduction.

In this conference, we’ll talk about what the Ark has accomplished throughout its long history, discuss the project’s future, and highlight the importance of biodiversity for life on our planet.

The panel of speakers will be published soon.
